A Minty Lemonade

 This is incredibly easy to make at home and a very welcome addition at any spring or summer setting. 

A homemade minty lemonade.

Making a concentrate means it can be regulated as you fancy, and is especially delicious combined with a sparkling water such as San Pellegrino.

The concentrate will keep in the fridge for 2 weeks and even makes a nice addition to seasonal cocktails or iced teas. 

Ingredients

Sugar, 150g

Water, 100ml

Mint, a handful of sprigs

Lemons, 5

San Pellegrino

 

Method

1.      Put the sugar in a small pan, cover with 100ml of water and bring to a boil. Add the mint and the peel of 2 lemons and simmer on low heat for 15 minutes.

2.     Let cool and put through a sieve. Add the juice of the 5 lemons and keep sealed in the fridge for 2 weeks. Dilute with still or sparkling water to taste.
